Baked "Fried" Green TomatoesI really love fried green tomatoes. Apparently other people are acquiring a taste for them as well, because they are now available in most of the fancy restaurants around Raleigh! In this recipe, the green tomatoes are breaded, brushed with butter and then baked to reduce the calories.

Makes 4 servings
Ingredients
  • 2 large green tomatoes
  • 2 tablespoon butter, melted
  • 1 egg
  • 1/2 cup reduced fat buttermilk
  • 1 cup cornmeal
  • 1 teaspoon cajun spice
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Grated cheddar cheese (optional)
  • Chopped fresh basil (optional)
Instructions
  1. Preheat the oven to 400 degrees.
  2. Peel the tomatoes with a vegetable peeler (the breading don’t seem to stick to the skin well). Slice the tomatoes.
  3. Combine the egg and reduced fat buttermilk in a bowl and whisk.
  4. In another bowl, combine cornmeal, cajun spice, chipotle chili powder, salt and pepper.
  5. Spray a baking dish that is large enough to accommodate all of the tomato slices with cooking spray.
  6. Dip the tomato slices into the egg mixture and then into the cornmeal mixture. Place the breaded slices in the baking dish.
  7. Brush the tomato slices with butter and bake for 20 minutes. Remove them from the oven and sprinkle with grated cheese if desired. Put them back in the oven for a minute until cheese melts. Remove from oven and sprinkle with fresh chopped basil if desired.

    I was pleased with this recipe. I did substitute the buttermilk with almond milk cause I’m allergic to
    dairy. As well, as using organic smart balance butter. It still tasted real good. Thank You!!!
