Balsamic Tuna

My Mom gave this tuna steak recipe to me back when Jason and I were eating seafood. It was one of our favorite dishes until we became vegetarians. The tuna is topped with a tangy, sweet salsa that combines tomato, onion, balsamic vinegar and orange marmalade. I can’t provide a photo since we no longer eat tuna, but I promise this is very good!

Makes 4 servings
Ingredients
  • 4 tuna steaks, 6 ounces each
  • 4 plum tomatoes, diced
  • 1 sweet onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup orange marmalade
  • 1/2 cup balsamic vinegar
  • Cayenne pepper
  • garlic salt
  • paprika
  • Cooking spray
Instructions
  1. Preheat the broiler.
  2. Warm the oil over medium-high heat. Add the minced garlic and onions and saute until golden, 2 to 3 minutes.
  3. Add the tomatoes, marmalade and vinegar. Cook for an additional 3 to 4 minutes.
  4. Spray the tuna steaks with cooking spray and then sprinkle with garlic salt and paprika. Transfer to a broiler pan and broil for 2.5 minutes on each side for medium-rare tuna, or longer if you prefer the tuna to be more well done.
  5. Transfer the tuna to plates, top with salsa and serve.
