Makes 4 servings
Ingredients
- 4 cups carrots, sliced diagonally
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 1 tablespoon frozen orange juice from concentrate
- 2 teaspoons unsalted butter or olive oil
- 1/4 teaspoon grated orange zest
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon salt
- Large pinch of cinnamon
- Large pinch of nutmeg
Instructions
- Bring 1 inch of water to a boil in a skillet. Add the carrots and return to a boil. Cover and cook, stirring occasionally for 5 or 6 minutes or until the carrots are tender. Keep a tablespoon of the cooking liquid and then drain the carrots.
- Return the skillet to the burner and add the tablespoon of cooking liquid that was reserved earlier, as well as all of the other ingredients except the carrots. Stir over medium heat until hot. Add the carrots and toss. Cook until heated through.
