Classic Acorn SquashThis acorn squash recipe is one of my favorite sides because it is very easy to make and tastes wonderful. Acorn squash is packed with more 145% of the recommended daily value of vitamin A. I like to serve it with a slice of whole wheat bread and a salad. This combination provides a lot of color that is especially appealing.

Makes 2 servings
Ingredients
  • 1 acorn squash
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 2 teaspoons maple syrup
Instructions
  1. Preheat the oven to 400 degrees.
  2. Cut the acorn squash in half lengthwise and use a spoon to scoop out the seeds.
  3. Add about an inch of water to a baking dish. This keeps the squash from drying out. Put the squash in the dish.
  4. Divide the butter, brown sugar and maple syrup between the two halves of the squash and bake until soft, about an hour and 15 minutes.
