Lime-Broiled Shrimp with Tropical Fruit RelishThis is a tasty dish for a dinner party or any other special occasion. The sweetness of the fruit relish contrasts nicely with the spiciness of the shrimp and it looks pretty on your plate.

Makes 4 servings
Ingredients
  • 1/2 teaspoon grated lime zest
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 2 teaspoons light brown sugar
  • 1/8 teaspoon cayenne pepper
  • 1 pound large shrimp, shelled and deveined
  • 2 cups diced pineapple, fresh or canned, juice-packed
  • 2 kiwi fruit, peeled and diced
  • 1/2 cup diced jicama or tart apple
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh cilantro
Instructions
  1. Mix the lime zest, 2 tablespoons of the lime juice, soy sauce, brown sugar and cayenne pepper together in a bowl. Add the shrimp and toss to coat. Set aside.
  2. Mix the pineapple, kiwi, jicama, honey, cilantro and remaining tablespoon of lime juice together in another bowl.
  3. Preheat the broiler. Put the shrimp on a broiler pan and drizzle with the marinade. Broil the shrimp 5 inches from the heat for 5 minutes or until the shrimp are browned.
  4. Spoon the relish onto plates and top with the shrimp to serve.
