Ingredients
- 1/2 teaspoon grated lime zest
- 3 tablespoons fresh lime juice
- 2 tablespoons soy sauce
- 2 teaspoons light brown sugar
- 1/8 teaspoon cayenne pepper
- 1 pound large shrimp, shelled and deveined
- 2 cups diced pineapple, fresh or canned, juice-packed
- 2 kiwi fruit, peeled and diced
- 1/2 cup diced jicama or tart apple
- 2 tablespoons honey
- 2 tablespoons chopped fresh cilantro
Instructions
- Mix the lime zest, 2 tablespoons of the lime juice, soy sauce, brown sugar and cayenne pepper together in a bowl. Add the shrimp and toss to coat. Set aside.
- Mix the pineapple, kiwi, jicama, honey, cilantro and remaining tablespoon of lime juice together in another bowl.
- Preheat the broiler. Put the shrimp on a broiler pan and drizzle with the marinade. Broil the shrimp 5 inches from the heat for 5 minutes or until the shrimp are browned.
- Spoon the relish onto plates and top with the shrimp to serve.
