Ingredients
- 4 eggs, plus 1 egg white
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon allspice
- 4 thick slices of bread
- 1 tablespoon butter, melted
- scant 1/2 cup superfine sugar
- 1/4 cup freshly squeezed orange juice
- scant 2 cups of mixed seasonal berries such as strawberries, raspberries and blueberries
Instructions
- Preheat the oven to 425 degrees.
- Whisk the eggs and egg white together in a bowl. Add the cinnamon and allspice and whisk to combine.
- Soak each bread slice in the egg mixture for approximately one minute per side. Grease a backing sheet with cooking spray and place the bread slices on it. Bake for 5 to 7 minutes until lightly browned. Turn the slices over and cook for an additional 2 or 3 minutes.
- While the toast is baking, add the sugar and orange juice to a medium pan. Bring to a boil over low heat, stirring until the sugar has dissolved. Remove from the heat and stir in the berries. Allow to cool for 10 minutes. Serve the berries over the toast to serve.
