Fig and Goat Cheese WontonsThis delicious wonton recipe is one of my favorites. It’s perfect for impressing guests and goes especially well with a nice salad. The wontons also freeze well for later use.
The dried figs are a good source of potassium and calcium. When compared by weight, they actually contain more calcium than whole milk!

1 wonton = 80 calories; 1g protein; 16g carbohydrates; 1g fat; 5mg cholesterol; 151mg sodium; 1g fiber

Makes 20 wontons
Ingredients
  • 1 generous cup dried figs
  • 1 cup sherry cooking wine
  • 1 teaspoon honey
  • 5 ounces semisoft goat cheese
  • 40 wonton skins
  • cooking spray
Instructions
  1. Preheat the oven to 350 degrees.
  2. Step 1Bring the figs, sherry, and honey to a simmer over medium-low heat and cook until wine is reduced, about 15 minutes. Pour the mixture into a food processor and blend until combined.
  3. Step 1Place 2 wonton skins on a work surface. Spread a teaspoon of the fig mixture on the center of one skin and a teaspoon of goat cheese on the center of the other. Wet the edges of one wonton skin and then place the other on top with the filling facing down, so that the two fillings are on top of each other. Press the edges of the wonton skins together to seal.
  4. Step 2Place finished wontons on a baking sheet. After assembling all of the wontons, spray them with cooking spray and bake for 15 minutes or until golden.
